DRAGON MANGO FRUIT CHICKEN & FRIED RICE


This recipe tastes just like you ordered this food from a Chinese restaurant. A quick and great meal for the family.
Ingredients
Chicken breast 3 , cut into chunks
Olive oil 1 Tablespoon
Salt To Taste
Pepper To Taste
Garlic 5 Clove (25 gm), cut in small pieces
Onion 1 , cut in small pieces
FOR GLAZE
Water 1 Cup (16 tbs)
Dragon mango fruit juice 1 Cup (16 tbs)
Soy sauce 2 Tablespoon
White vinegar 2 Tablespoon
Red pepper flakes 1 Pinch
Brown sugar 2 Tablespoon
Wondra flour 2 Tablespoon (or more)
FOR FRIED RICE
Eggs 2
Cooked rice 2 Cup (32 tbs)
Soy sauce 1⁄2 Cup (8 tbs)
Frozen vegetable 1 Cup (16 tbs)

 

Directions
MAKING
1. For the chicken: In a pan heat olive oil, saute chicken. Add salt and pepper
2. Remove chicken from the pan after it turns brown. Transfer the chicken onto a plate.
3. Add half the onion and garlic pieces, once the onion turns translucent, add the chicken back. Cook till done.
4. For the glaze: Take a pan add water, dragon mango fruit, soy sauce and white vinegar.
5. After it comes to a boil, add brown sugar and mix till it dissolves.
6. Add Wondra flour, just enough to thicken and pour it over the chicken.
7. Place the pan on stove, cover with lid and cook till done.
8. For the rice: In a pan add olive oil and saute remaining onion and garlic.
9. Take a pot, add cooked onion, garlic and cooked rice. Mix it well.
10. In another pan scramble eggs.
11. To the rice add scrambled eggs, soy sauce, and frozen vegetables. Mix it well.

SERVING
13. Serve hot along with the chicken.
