Chicken Marinara

CHICKEN MARINARA

 

 

 

Cook this amazing marinara chicken in your kitchen and enjoy it with a pasta of your choice.
Ingredients
FOR MARINARA SAUCE
Garlic 4 , diced
Shallots 3 , diced
Olive oil 1 Tablespoon
Canned crushed tomatoes 28 Ounce (1 Can)
Chardonnay 1 Cup (16 tbs)
Oregano 1 Tablespoon
Crushed red pepper 1 Teaspoon
Basil 1⁄2 Cup (8 tbs), chopped
FOR CHICKEN
Boneless skinless chicken thighs 11
Flour 1⁄2 Cup (8 tbs)
Eggs 2 Large
Bread crumbs 1⁄2 Cup (8 tbs)
Parmesan cheese 1⁄2 Cup (8 tbs)
Olive oil 4 Tablespoon
FOR TOPPING
Mozzarella 1 Cup (16 tbs)
Parmesan 1⁄4 Cup (4 tbs)

 

Directions
GETTING READY

1. Preheat the oven to 350 F.

MAKING

2. Heat a pan. Coat it with vegetable oil and add shallots and garlic to the pan. Saute them in and continue to cook.

3. Mix together parmesan cheese and bread crumbs in a separate bowl.

4. When the shallots and garlic are sauteed, add in crushed tomatoes and chardonnay. Mix it well.

5. Throw in oregano and crushed red peppers. Mix and let the sauce simmer until it thickens a bit.

6. Beat eggs in a bowl to make egg wash. Keep flour in another bowl. Keep aside.

7. Dip your chicken thighs in egg wash, then transfer it to flour and coat it well. Dip it back in egg wash and then dredge it with bread crumbs and parmesan mix to coat it very well. Keep it on a plate. Repeat the process to coat all thighs uniformly.

8. Heat olive oil in another pan. Transfer coated chicken thighs to the pan and brown them on both sides.

9. When the sauce has thickened up a bit, add basil and mix that in. Cook until done.

10. Place the browned chicken thighs in to a casserole dish. Pour marinara sauce over the chicken.

11. Generously sprinkle mozzarella cheese on top. Top it with some parmesan, cover the dish with aluminium foil and place the dish in the oven. Cook for about 25 minutes.

 

SERVING

12. Serve the chicken with some pasta and enjoy.
