CHEESY LEMON MUFFINS

 

This recipe is so good. My friend gave me this recipe for these muffins. YUM YUM!
Ingredients
FOR DRY INGREDIENTS
Flour 2 Cup (32 tbs)
Baking powder 1⁄2 Teaspoon
Baking soda 1⁄2 Teaspoon
Salt 1⁄2 Teaspoon
FOR WET INGREDIENTS
Butter 1⁄2 Cup (8 tbs) (at room temparature)
Sugar 1 Cup (16 tbs)
Lemon zest 2 Tablespoon
Eggs 1 (at room temparature)
Fresh lemon juice 1 Tablespoon
Ricotta cheese 1 Cup (16 tbs)
Vanilla extarct 1 Tablespoon
FOR TOPPING
Sugar 8 Teaspoon

Directions
GETTING READY
1. Preheat the oven to 350 degrees F. Line a muffin tray with liners and set aside.

MAKING
2. In a large bowl, mix together all the dry ingredients. Set aside.
3. Using a stand mixer, cream together butter and sugar until fluffy.
4. Add in the lemon zest and mix again. Set aside.
5. In a medium bowl, whisk together egg, lemon juice, ricotta cheese and vanilla extract.
6. Into the butter mixture, add in flour and egg mixture and combine well.
7. Pour the batter into the prepared muffin tray and sprinkle some sugar on the top.
8. Bake for 20 minutes.

SERVING
9. Serve muffins with tea or coffee.
