CHEDDAR BAKED CHICKEN and ROASTED POTATOES

Ingredients
FOR BAKED CHICKEN:

Chicken breast 3 , fat trimmed off, pounded, halved lengthwise

Flour 1⁄2 Cup (8 tbs)

Salt 1⁄2 Teaspoon

Pepper 1⁄2 Teaspoon

Garlic salt 1 Teaspoon

Egg 1

Milk 1 Tablespoon

Breadcrumbs 1⁄2 Cup (8 tbs)

Grated cheddar cheese 1 Cup (16 tbs)

Rice krispies 1 Cup (16 tbs) (frozen)
FOR ROASTED POTATOES:

Potatoes 7 , peeled, diced

Butter 1⁄4 Cup (4 tbs)

Canola oil 1⁄4 Cup (4 tbs)

Salt To Taste

Pepper To Taste

Paprika To Taste

Garlic salt 1 Teaspoon

Parsley flakes 1 Teaspoon

 

Directions
GETTING READY:

Preheat oven to 350°F.
MAKING:

In a large bowl, combine flour, salt, pepper, garlic salt and mix well.
In another bowl, whisk together egg and milk.
In another bowl, combine breadcrumbs, cheddar cheese, rice krispies and mix well.
Dredge chicken pieces in flour mixture, egg mixture and breadcrumbs mixture respectively.
Place over baking dish and pop into oven.
Bake for 30-35 minutes.
For roasted potatoes, combine potatoes, oil, butter, salt, pepper, paprika, garlic salt, parsley flakes and mix well.
Spread on baking sheet and sprinkle more seasoning if desired.
Pop into oven and roast until done.
